I would understand it the same way

as for the Exodus 18:15, the Vulgate reads “Dominus regnabit in aeternum et ultra”

“‘eternally’ and furthermore”, which corresponds to the Hebrew text as far as I can judge (you can check it on scripture4all.org)

I wonder why the Greek translators rendered it the way they did

I believe that our thoughts really have no changed, just the way we try to communicate them has. I think they may thought the same as well because AIONIOS means usually meant an indeterminate amount of time and was often related to one’s own life and their inability to see beyond the present.
